Fran's Lentil & Vegetable Soup

Ingredients:

  • 1 Tbsp olive oil
  • 4 medium carrots, chopped
  • 1 small onion chopped
  • 1 tsp ground cumin
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14 to 14.5 oz) vegetable broth (1 ¾ cups)
  • 1 cup dried red lentils
  • 1 bag (5 oz.) baby spinach

Directions:

  • in 4-quart saucepan, heat oil on medium heat until hot
  • add carrots & onion, & cook 6-8 minutes or until lightly brown & tender
  • stir in cumin & cook for 1 minute
  • add tomatoes, broth, lentils, 2 cups water, ¼ tsp salt, & 1/8 tsp ground black pepper; cover & heat to boiling on high
  • reduce heat to low & simmer, covered 8-10 minutes or until lentils are tender
  • stir in spinach
  • makes about 7/12 cups ( 4 main dish servings)
