Fran's Lentil & Vegetable Soup

Ingredients:
- 1 Tbsp olive oil
- 4 medium carrots, chopped
- 1 small onion chopped
- 1 tsp ground cumin
- 1 can (14.5 oz) diced tomatoes
- 1 can (14 to 14.5 oz) vegetable broth (1 ¾ cups)
- 1 cup dried red lentils
- 1 bag (5 oz.) baby spinach
Directions:
- in 4-quart saucepan, heat oil on medium heat until hot
- add carrots & onion, & cook 6-8 minutes or until lightly brown & tender
- stir in cumin & cook for 1 minute
- add tomatoes, broth, lentils, 2 cups water, ¼ tsp salt, & 1/8 tsp ground black pepper; cover & heat to boiling on high
- reduce heat to low & simmer, covered 8-10 minutes or until lentils are tender
- stir in spinach
- makes about 7/12 cups ( 4 main dish servings)
