Janice's Glazed Sweet Potatoes

Ingredients:

  • 4-5 lbs sweet potatoes peeled
  • 4 Tbsp (1/2 stick) butter or margarine
  • 1 cup dark brown sugar
  • 1 Tbsp vanilla extract
  • ¼ tsp salt
  • ¼ cup whiskey or bourbon

Directions:

  • Preheat oven to 375 F
  • Cut sweet potatoes into ½ inch slices, steam for 10 minutes
  • In a saucepan, melt butter/margarine on medium heat. Add brown sugar, vanilla, and salt until sugar dissolves
  • Stir in whiskey, cook 5-10 minutes until thickened
  • Spray a 9x13 inch glass baking dish with cooking spray
  • Place sweet potatoes in dish and drizzle sauce over
  • Bake uncovered for 1 hour
  • Baste sauce every 10-15 minutes
