Janice's Glazed Sweet Potatoes

Ingredients:
- 4-5 lbs sweet potatoes peeled
- 4 Tbsp (1/2 stick) butter or margarine
- 1 cup dark brown sugar
- 1 Tbsp vanilla extract
- ¼ tsp salt
- ¼ cup whiskey or bourbon
Directions:
- Preheat oven to 375 F
- Cut sweet potatoes into ½ inch slices, steam for 10 minutes
- In a saucepan, melt butter/margarine on medium heat. Add brown sugar, vanilla, and salt until sugar dissolves
- Stir in whiskey, cook 5-10 minutes until thickened
- Spray a 9x13 inch glass baking dish with cooking spray
- Place sweet potatoes in dish and drizzle sauce over
- Bake uncovered for 1 hour
- Baste sauce every 10-15 minutes
